Fresh Air Favorite Recipes

One of our favorite classes at camp this summer was culinary arts! We learned a lot from the basics of cooking to some really awesome recipes that we could make at home!  

Check out some of camp’s tasty recipes:  

Garden Salsa  

Ingredients 

  • 3-4 medium tomatoes  
  • 1 medium onion  
  • 1 small hot pepper  
  • 1 small lime  
  • 2 tablespoons cilantro  
  • 1 teaspoon of olive oil (extra virgin)  
  • Salt and pepper to taste  

Directions – Dice up tomatoes, onions and pepper and put into a bowl.  Squeeze the lime into bowl and add the remaining ingredients.  Mix.   

Tortilla chips: Enjoy with tortilla chips or make your own. Slice up corn tortillas and bake them in the oven at 375 degrees.  Bake 5-10 minutes or until crisp.  Add seasoning of choice to make flavored tortillas.  

Zucchini Noodles & Pesto  

Ingredients 

  • Noodles  
  • 2 medium zucchini  
  • 1 Tbsp olive oil  
  • 2 cloves minced garlic  
  • 2 Tbsp grated parmesan cheese  
  • Salt & Pepper to taste  
  • Pesto  
  • 1 cup fresh basil leaves  
  • 3 cloves garlic  
  • 3 Tbsp pine nuts  
  • 1/3 cup grated parmesan cheese  
  • 1/3 cup olive oil  
  • Salt & Pepper to taste     

Directions – Combine Pesto ingredients in a blender and process into a paste; set aside in a bowl. Shred zucchini in with a cheese grater or vegetable peeler and place in a baking dish with parmesan, oil, garlic, salt and pepper. Bake at 200F for 10 minutes. Spread pesto over noodles and serve.  

 

Ingredients 

Topping  

  • ½ cup of rolled oats  
  • 1½ cup all-purpose flour  
  • 1/3 cup of packed brown sugar  
  • ½ teaspoon ground cinnamon  
  • 5  tablespoon butter  
  • 1 tablespoon of cinnamon  
  • ½  lemon zested  
  • A sprig of thyme / pinch of salt  

Filling  

  • 4 cups your favorite chopped summer fruit  
  • Splash of fresh lemon juice  
  • ¼ cup of honey or agave nectar  
  • ½ teaspoon vanilla extract  
  • ¼ cup corn starch  

Directions – Preheat oven to 375 F. Spray 7×11 dish with non-stick spray. Topping; In bowl, combine topping ingredients. Pinch to make crumble. Combine filling ingredients. MIX! Transfer to baking dish. Sprinkle topping over fruit. Bake 55-60 min. until filling is bubbly & topping is golden.
